CHUCK'S CHILI WITH BACON TIME: 2 hours, including prep CALORIES: 55 per oz.
2 lbs ground beef or other meat 5 slices of bacon, chopped 1 can black soy beans (drained and washed)
1 14.5 oz can of crushed tomato sauce 2 medium Roma tomatoes, diced 1 medium yellow, diced
1 medium red pepper, diced 1 small white onion, diced 2 medium jalapeno peppers, finely diced OR 1 small can of diced green mild chilis
2 tsp minced garlic 1 tsp finely ground pink Himalayan salt or... salt 1/2 tsp ground black pepper
1 tsp dried oregano leaves 2 tsp ground cumin
2 tsp chili powder 1 tsp Worcestershire sauce 2 1/2 cups low-sodium chicken or beef broth.
Optional sides: shredded cheddar cheese, sour cream and cilantro
1. Heat a Dutch oven or other heavy pot of medium-high heat. Put chopped bacon in pot and cook until bacon is 90% cooked through. Add ground beef, using wooden spoon to break it up as it cooks.
2. Once the ground beef is completely cooked, add onion, red and yellow bell peppers, all tomato products, garlic, salt and spices. Stir until mixed through. Add jalapeno peppers, Worcestershire sauce, and broth.
3. Leave in pot or transfer to crock post, cover with lid and simmer for 90 minutes.
4. Then remove lid and let simmer for 10 more minutes to reduce liquid. Serve immediately with cheddar cheese and sour cream. Chopped cilantro is another option.
